If you love tacos as much as me, they’re simply something you’re not willing to give up! So I thought I’d put a fresh and healthy twist on a classic Mexican Meal.
1x Cos Lettuce (use as lettuce cups)
2x Cubed Tomatoes
1x Grated Carrot
½ a Red Onion
1kg of Lean Beed Mince (alternatively, chicken or turkey mince)
400g can of Kidney Beans
400g pure canned Dice Tomato’s
1-2 teaspoon of mixed Italian Herbs
2 cloves of Garlic
Brown the mince in a large frying pan with the garlic and mixed herbs.
Add in the kidney beans and canned tomatoes and allow it to simmer on a low heat.
Smash a fresh avocado, add in half a diced red onion and squeeze over ½ a lime.
Grate the carrot and cube the tomatoes.
Serve the mince in the lettuce cup, top with the carrot, cubed tomatoes, avocado and lime.
